Try out this recipe for “Pilgrim’s Pie.” You can taste all of Thanksgiving in a single bite!
Pilgrim’s Pie
Ingredients:
For the Filling:
2 cups cooked turkey, chopped (you can also use chicken)
1 cup cooked vegetables (such as peas, carrots, green beans, corn)
1 cup gravy (homemade or store-bought)
1/2 cup cranberry sauce
For the Mashed Potato Topping:
4 cups mashed potatoes (leftover mashed potatoes work great)
1/2 cup milk or cream
4 tablespoons butter
Salt and pepper to taste
Optional Garnish:
Chopped parsley or thyme for garnish
Instructions:
Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish or similar size with butter or cooking spray.
In a large mixing bowl, combine the chopped turkey, cooked vegetables, gravy, and cranberry sauce. Stir until everything is well combined.
Spread the turkey and vegetable mixture evenly in the prepared baking dish.
In a separate bowl, mix together the mashed potatoes, milk or cream, butter, salt, and pepper until smooth and creamy. Adjust seasoning to taste.
Spread the mashed potatoes evenly over the turkey and vegetable mixture in the baking dish, creating a smooth layer.
Optionally, use a fork to create some texture on the surface of the mashed potatoes.
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the filling is bubbly and the mashed potato topping is lightly golden brown
